If you are a Fennel lover, you will love my fennel and apple salad. It’s slightly sweet, slightly tangy, crunchy, and ever so addictive. I make it every so often and we all end up fighting over it. It’s one of those salads that barely makes it to the dinner table.

Take some fennel, an apple, and some dressing ingredients and you make the most crunchy, delicious salad you will ever have.

  • 1 tablespoon whole-grain Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons olive oil
  • 1 fennel
  • 1 Gala apple
  • 1/2 small red onion
  • handful of parsley
  • 1/4 cup pecans

Prepping the Dressing

Let’s start with the dressing. It’s a simple but delicious dressing that I use for a lot of salads.

  • In a small bowl, add 1 tablespoon of whole-grain Dijon mustard.
  • Next, add 1 tablespoon of apple cider vinegar.
  • Then 1 tablespoon of maple syrup.
  • Salt and pepper to taste, but I add 1/2 teaspoon of each.
  • Using a small whisk or fork, mix them all.
  • While you are mixing, start to pour 4 tablespoons of extra virgin olive oil and continue to mix until you have a homogenous mixture.
  • Set the dressing aside while we prepare the rest of the ingredients.

Prepping the Rest of the Ingredients

Let’s get the rest of the salad ingredients ready.

  • Wash and core an apple. Slice it into match stick kind of slices. Put the pieces into a bowl and set aside. I do not peel the apple, but you can if you like.
  • Next, wash and slice the fennel. Keep the fonds from the top which we will use as well. Slice the fennel into matchstick slices too and set them aside in a bowl.
  • Peel and slice 1/2 a red onion into thin slices and set aside.
  • I love adding parsley to the salad, but you can use cilantro if you prefer. Take a handful and chop it finely – about 1/4 cup of chopped leaves. Put the chopped leaves into a bowl and set aside.
  • This is when the fronds come in. Wash and dry the fronds. Finely slice them and put them aside.
  • Finally, we can chop the nuts. I love pecans and add them to this salad, but you can use walnuts too. Roughly chop them into bits and set them aside in a bowl.

Assembling the Fennel and Apple Salad

Let’s get to assembling the salad.

  • In a large salad bowl, add the chopped fennel, chopped apple, and the chopped onions. Mix them so they are evenly distributed.
  • Add the dressing and mix it into the salad.
  • Now we can add the greens and nuts. Add the chopped parsley, fronds, and pecans to the bowl.
  • Mix them in so everything is evenly distributed again.

Serving the Fennel and Apple Salad

This fennel salad makes for a perfect side dish for so many meals! I serve it with my Honey Mustard Chicken, with my Gluten Free Chicken Fingers, with my Oven Roasted Chicken Thighs, or even with my Creamy Pesto Gnocchi. It goes well with all kinds of proteins.

Ingredients

  • 1 tablespoon whole-grain Dijon mustard

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon maple syrup

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 4 tablespoons olive oil

  • 1 fennel

  • 1 Gala apple

  • 1/2 small red onion

  • handful of parsley

  • 1/4 cup pecans

Directions

  • Mix the dijon, apple cider vinegar, maple syrup, salt and pepper.
  • Add the olive oil and continue to mix.
  • Set aside
  • Slice the apple into matchstick pieces
  • Slice the fennel into matchstick pieces
  • Finely slice the onion
  • Finely chop the parsley and fennel fronds
  • Roughly chop the pecans
  • In a large salad bowl, add the fennel, apple, and onion. Mix well.
  • Add the dressing and mix it in.
  • Add the parsley, fronds, and pecans. Mix in.
  • Enjoy fresh.

What does fennel pair well with?

Fennel goes really well with any other crunchy fruit or vegetable. Something tart or zingy like oranges is another thing that goes really well with fennel. Try my fennel and apple recipe with pecans and a tangy, sweet dressing and you will be crunching your way to a delicious salad.

What part of the fennel can you not eat?

Every part of the fennel is edible. You can eat the whole bulb and the fronds too. And my favourite are fennel seeds. These can be used for so many recipes and eaten just by themselves for a sweet mouth-freshening treat after dinner.

How do I properly wash fresh fennel?

To wash the fennel properly, chop off the top with fronds off and set aside. The fronds can be eaten – sprinkle them on the salad. Then chop the fennel bulb in half. Wash it properly under cold water and then set it aside to dry for a couple of minutes.
