My nutritious and satisfying Mediterranean tortellini salad is perfect for a quick dinner idea or meal prep inspiration.

In my house everybody loves tortellini. I make this tortellini salad all the time, but in particular during the summer months. It is a great salad for back yard barbecues, for summer picnics, and for students make ahead meals. It is also very versatile and you can add all kinds of fresh ingredients to make a variety of different flavoured salads.

Some cooked tortellini, some fresh vegetables, some dressing and you will have a delicious salad.

  • 3 tablespoons white wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1/4 cup extra virgin olive oil
  • 4 cups tortellini
  • 2 shallots
  • 1 cup cherry tomatoes
  • 1/2 English cucumber
  • 1 can of cooked chickpeas
  • 1 cup arugula

The Tortellini

Let’s start with getting the tortellini cooked. It needs to cool down completely before we can use it for the salad, so it’s best to start with that.

  • Cook it as per the package instructions.
  • Drain and set aside until you are ready to use.

The Vegetables for the Mediterranean Tortellini Salad

Next we can get the vegetables cut and ready.

  • Peel and slice 2 shallots and set aside.
  • Cut 1/2 an English cucumber into cubes and set aside.
  • Chop 1 cup of cherry tomatoes and set aside.
  • Finally, finely cut 1 red chilli and set aside (optional).

The Dressing for the Tortellini Salad

I use a very simple dressing for this salad. Tortellini is filled with cheese and flavourful already, so we don’t need too much dressing wise.

  • To a salad bowl, add 3 tablespoons of white vine vinegar.
  • Add 1/2 a teaspoon of salt and pepper each (or to taste).
  • Using a small whisk or fork, mix together.
  • While you are whisking, pour in 1/4 cup of good quality olive oil and continue to whisk until you have a homogenous dressing.

Making the Mediterranean Tortellini Salad

Now that we have all our ingredients together, we can build the salad.

  • To the bowl with the dressing, add the boiled and now cooled down tortellini.
  • Toss the tortellini in the dressing so it’s all coated.
  • Then, add the sliced shallots, chopped cucumber, cherry tomatoes, red chilli, and the boiled and cooled chick peas.
  • Again, toss well so they are evenly distributed.
  • Finally add 1 cup of fresh arugula to the bowl.
  • Toss so the arugula is evenly distributed.
  • Allow your Mediterranean tortellini salad to rest for 5 – 10 minutes so the flavours get absorbed.
  • Enjoy as a main or a side.

What dressing should I use for Tortellini Salad?

The best dressing to use with for tortellini salad is a tangy dressing. I make a simple dressing with white wine vinegar, salt, pepper, and extra virgin olive oil.

Can I make Mediterranean tortellini salad ahead?

Yes, tortellini salad can be made ahead. It’s a great make ahead salad for university students. Store it in the fridge in an air tight container and enjoy for up to 3 days.

Can I add cheese to my tortellini salad?

Yes, you can add bocconcini cheese, feta cheese, or even fresh mozzarella cheese to a tortellini salad.

Ingredients

  • 3 tablespoons white wine vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon fresh cracked black pepper

  • 1/4 cup extra virgin olive oil

  • 4 cups tortellini

  • 2 shallots

  • 1 cup cherry tomatoes

  • 1/2 English cucumber

  • 1 can of cooked chickpeas

  • 1 cup arugula

Directions

  • Cook the tortellini as per package instructions.
  • Drain and allow it to cool down completely.
  • Slice the shallots and set aside.
  • Chop the English cucumber into bite size cubes and set aside.
  • Chop the cherry tomatoes into quarters and set aside.
  • Finely chop a red chili (optional)
  • To a large salad bowl, add the vinegar, salt, pepper, and mix together.
  • Once mixed, while still whisking, add the olive oil and continue to mix until you have a homogenous mixture.
  • To the dressing, add the tortellini and mix to coat.
  • Then add the shallots, cucumber, cherry tomatoes, red chilli, and the cooked and cooled chick peas.
  • Mix everything together so everything is evenly distributed and coated with the dressing.
  • Finally add the arugula and mix it in.
  • Allow the salad to sit for about 10 mins and then serve and enjoy.
