Left Over Cranberry Sauce French Toast

Have left over cranberry sauce and don’t know what to do with it? Why no turn it into this delicious, and easy baked cranberry sauce french toast?

I love cranberry sauce and always make extra for Thanksgiving and Christmas. I then enjoy using leftovers for recipes such as my leftover cranberry sauce French toast. This recipe is one that we keep coming back to. This one, in particular, is the kids favourite because it’s like having baked PB&J sandwiches, only better.

Ingredients

The usual French toast ingredients with the addition of peanut butter and leftover cranberry sauce.

Ingredients List:

  • 2 tablespoons butter
  • 18 pieces of raisin bread
  • 6 tablespoons natural peanut butter
  • 3/4 cup leftover cranberry sauce (find my recipe here)
  • 4 organic free range eggs
  • 1 1/2 cups half and half or whole milk
  • 1 teaspoon ground sugar
  • 2 tablespoons brown sugar (optional)

The Peanutbutter for the Breakfast Recipe

My kids love peanut butter and would eat it every day if they could. I use it for so many recipes. For this French toast:

  • Spread the butter all over the bottom of a 9 x 13 baking dish.
  • Spread the peanut butter evenly on 6 slices of raisin bread.
  • Evenly spread the raisin bread in one layer on top of the butter in the baking dish.

Spreading the Cranberry Sauce

I make my own cranberry sauce and you can find my recipe for my fresh cranberry sauce here. The next step is to make the second layer:

  • Place a slice of raisin bread on top of slices with peanut butter on them.
  • Evenly spread the cranberry sauce on top of the second layer of raisin bread.
  • Gently push down a little, so the fruity mix soaks in ever so slightly into the bread.
  • Evenly sprinkle the brown sugar on top of the bread.
  • Lay a third layer of raisin bread on top of the sauce.

The Egg Custard for the No Waste Recipe

Now we are ready for the egg custard mix.

  • Crack the eggs into a mixing bowl.
  • Using a fork or whisk whip them well and add the half and half and cinnamon to the bowl.
  • Mix well until everything is evenly distributed.

Baking the Brunch Recipe

We are now ready to bake our cranberry sauce French toast.

  • Pour the egg custard over the top of the brown sugar.
  • Using a fork, gently push down on the bread. This helps the bread soak up the custard.
  • Allow it to sit for about 5 minutes to allow more absorption.
  • Sprinkle some more cinnamon on top for added cinnamon flavour (this step is optional).

  • While the bread is soaking the custard mix, preheat the oven to 350 degrees F.
  • Place the baking dish in the middle rack and allow it to bake until it starts to crisp a little.
  • Remove it from the oven and let it sit for about 2-3 minutes.
  • Serve hot with some maple syrup and more cranberry sauce.

Variations:

Sometimes I vary this recipe:

  • Instead of using raisin bread, I use plain croissants. Slice them lengthwise and spread the peanut butter on one side and cranberry sauce on the other and make a sandwich. Then pour over the egg custard and bake.
  • Instead of peanut butter, try using almond butter or even cashew nut butter. This changes the flavour and I love the nuttiness of almond butter much better.
  • Instead of using half and half or whole milk, try replacing it with oat milk or almond milk.

How do I serve my Cranberry Sauce French Toast?

I love serving this hot out of the oven:

  • Serve with a side of pure maple syrup. I sometimes heat the maple syrup a little. This enhances the flavour and helps keep the breakfast warm as we eat it.
  • I love adding more homemade cranberry sauce on the French toast. I heat this up too. It too keeps the breakfast warm as we consume it.
  • Add a dollop of fresh whipped cream or for an over indulgent recipe, a dollop of vanilla ice cream.
