Strawberry Rhubarb Iced Tea
My Strawberry Rhubarb Iced Tea is the ultimate thirst-quencher for hot summer days, and it’s easy to make right at home!
I make my Strawberry Rhubarb Iced Tea all through the summer. As soon as I find rhubarb in stores, I buy a bunch and don’t stop until the season is over. Whether I’m hosting a backyard BBQ, enjoying a picnic with friends and family, or simply wanting something cold and refreshing, this drink is my go-to. And best of all, it’s so easy to make!

- 1 cup chopped rhubarb (about 2 stalks)
- 1/2 cup fresh strawberries
- 1/4 cup sugar
- 4 teabags of green tea
- 3 cups water
- 2 lemons

Steeping the Tea for Strawberry Rhubarb Iced Tea
Let’s begin with steeping the tea. I use green tea for my Strawberry Rhubarb Iced Tea, but I have used black tea as well. I prefer the earthy falvour or green tea for this.
- I cold steep my tea. I find that makes the tea a little less bitter.
- To steep, add 4 green tea bags to 2 cups of cold water. I also like my tea a little strong, but if you prefer a slightly milder tea, use 2 tea bags instead.
- Let the bags sit in the water for up to 2 hours. You could also steep the tea overnight in the fridge.
- You will see the colour of the water change as the tea steeps.

The Strawberry Rhubarb Syrup
While the tea is steeping, let’s make the Strawberry Rhubarb syrup.
- Wash, and chop the rhubarb into small bite size pieces – about 1 cup.
- Next, wash and chop the strawberries into bite size pieces as well – about 1/2 a cup.
- Add both to a small pot.
- Then, add 1/2 a cup of sugar to the pot.
- Finally, add 1 cup of water to the mix.
- Using a spoon, mix everything so that the strawberries and rhubarb are all submerged in the water.
- Bring the mixture to a boil.
- Once it has boiled, let it continue to cook for 3-4 more minutes. Then turn the heat off.
- Allow the mixture to cool down completely.

Straining the Syrup
Once the strawberry rhubarb mix has cooled down, we are ready to strain and use it.
- Place a sieve over a bowl or jug and pour the mixture into the sieve. The liquid will easily pass through the sieve and the strawberry rhubarb mix will be left in the sieve.
- I usually save the strawberry rhubarb mix in the fridge for other recipes or to enjoy by itself with some fresh whipped cream, or in a parfait.

Making the Strawberry Rhubarb Iced Tea
Now that we have the tea steeped and the strawberry Rhubarb syrup ready, we can make our iced tea.
- Remove the tea bags from the steeped tea and discard them.
- Pour the tea into a jug large enough to hold 3-4 cups of liquid.
- Next, pour the strawberry rhubarb syrup into the tea.
- Finally squeeze the juice of 2 whole lemons and add that to the tea.
- Give it a final stir and your delicious, refreshing, thirst-quenching Strawberry Rhubarb Iced Tea is ready.
- Refrigerate the iced tea for up to 2 hours to allow it to cool down.
- Enjoy straight or over ice.

Making a strawberry rhubarb syrup is very easy. Add chopped rhubarb, strawberry, sugar and water to a pot. Bring to a boil and continue to cook for 3-4 minutes. Once cooled, strain and enjoy the syrup.
Yes! You can make strawberry rhubarb iced tea with caffeine free tea bags. I make mine with green tea, but you can use caffeine free green tea or even caffeine free black tea.
I make my iced tea with both – depending on what I have available. I find limes are sweeter than lemons and make the iced tea a little less tart and more enjoyable.
Yes! My husband loves it with some gin. Add a shot of gin or other spirit of choice and enjoy it with an extra squeeze of lemon.

Directions
- Add the tea bags to 2 cups of cold water and allow to steep for up to 2 hrs to overnight.
- While the tea is steeping, rinse and chop the rhubarb and strawberries into bite size pieces.
- Add both to a sauce pan.
- Add the sugar.
- Finally add the water and bring the mixture to a boil.
- Continue to cook for 3-4 mins.
- Turn the heat off.
- Allow the strawberry rhubarb mix to cool down completely.
- Once cooled, strain the rhubarb and strawberry syrup.
- Remove the tea bags from the steeped tea.
- Pour it into a jug.
- Then, add the strawberry rhubarb syrup to the jug as well.
- Juice both the lemons and pour the juice into the jug with the tea.
- Mix and place in the fridge to cool down for up to 2 hrs.
- Enjoy over ice.
