Healthy Snack Balls

My plant-based Healthy Vegan Snack Balls are not only gluten-free but also kid-friendly, making them the perfect snack for the whole family.

I love having that little sweet something or other after a meal. I am always looking for and trying to create new ideas to fulfill that desire without having to consume a large number of calories or consuming a plate full of sugar. Here is just such a recipe that I am sure you will love. Try it! It takes 10 minutes to make and can be enjoyed by the whole family.

Some nuts, a lemon, some delicious natural maple syrup, and a food processor will give you the most delicious and healthy snack balls you have ever had.

  • 1 1/2 cups toasted cashew nuts
  • 1 1/2 cups unsweetened shredded coconut
  • zest of 1 lemon
  • 1/3 cup maple syrup
  • 1 tablespoon of lemon juice
  • 1 tablespoon neutral oil
  • 4 tablespoons of toasted sesame seeds
  • 4 tablespoons of cocoa powder
  • 4 tablespoons of shredded coconut

Blending the Ingredients

Making these delicious and healthy snack balls is so easy. In order to enjoy this super snack you will need a food processor.

  • To begin with, add 1 and 1/2 cups of toasted cashew nuts to a food processor. I buy unsalted roasted cashew nuts, but if you don’t have those, you can always toast them in the oven at 350 degrees for 10 minutes. Allow them to cool down completely before you use them.
  • Next, add 1 and 1/2 cups of shredded coconut, zest of 1 lemon, 1/3 cup of maple syrup, 1 tablespoon of lemon juice, and 1 tablespoon of neutral oil to the processor.

  • Close and blend until you have a smooth consistency.
  • Make sure to stop and scrape the sides at least once while blending, in order to blend everything evenly and to get a homogenous mixture.

Making and Coating the Balls

Now that our nut mixture is ready, we can get them turned into balls and enjoy them.

  • Using a spoon, scoop 1 tablespoon worth of mixture into your hand.
  • Using your hands, roll the mixture into a ball and place it into the bowl of toasted sesame seeds.
  • Roll it about to coat the entire ball with the seeds.
  • Make the next ball and roll it in the cocoa powder.
  • Do the same with all the mixture until you have made all 24 balls and coated them in toppings of your choice.

Storing Suggestions

We enjoy these Healthy snack balls right away, however,

  • They can be stored in the fridge for up to a week in an air-tight container.
  • Place them in an air-tight container, and store them in the freezer for up to 3 months. Remove them from the freezer and allow them to thaw overnight before enjoying them. Do not refreeze.

Variations for Healthy Snack Balls

This recipe can be varied in so many ways:

  • Replace the cashew nuts with walnuts, pecans, or even balanced almonds.
  • You can omit the shredded coconut and replace it with one-minute toasted oats. Toast the oats for 10 minutes, cool them down completely, then use.
  • Add spices, such as cinnamon, cardamom, or even allspice to give them a different flavour.
  • Try dipping in melted chocolate for a more decadent dessert ball.

Ingredients

  • 1 1/2 cups toasted cashew nuts

  • 1 1/2 cups unsweetened shredded coconut

  • zest of 1 lemon

  • 1/3 cup maple syrup

  • 1 tablespoon of lemon juice

  • 1 tablespoon neutral oil

  • 4 tablespoons of toasted sesame seeds

  • 4 tablespoons of cocoa powder

  • 4 tablespoons of shredded coconut

Directions

  • Add the cashew nuts, shredded coconut, lemon zest, maple syrup, lemon juice, and oil to a food processor.
  • Close and blend.
  • Open and scrape the sides to ensure everything gets evenly blended.
  • Close and blend until you have a smooth consistency.
  • Add the sesame seeds to a small bowl.
  • Add the cocoa powder to another small bowl.
  • Add the shredded coconut to a third small bowl.
  • Using a spoon, get about 1 tablespoon of the mix onto your hands.
  • Roll it into a ball and toss it into one of the bowls (with sesame, cocoa powder, or shredded coconut).
  • Roll the ball well so it’s evenly coated.
  • Place on a plate.
  • Roll and coat until you have all 24 balls created and coated.
