Pad See Ew Noodles

My Vegan Thai pad see ew noodles are perfect for any week night dinner. They come together in less than 30 minutes and will be loved by all.

Pad see ew noodles are one of my most favoured noodles to order when we go out for Thai food. It’s salty, chewy, and has a slightly sour hint to it. It is definitely one of our favourites here at home and I am sure when you try it, your family and friends will love it too.

A few sauces, some kale, some rice noodles, and a little love is all that it takes to make these amazing noodles.

Sauce

  • 2 tablespoons dark soy sauce
  • 2 tablespoons vegetarian oyster sauce
  • 2 tablespoons light soy sauce
  • 2 tablespoons white vinegar
  • 1 teaspoon garlic chili sauce
  • 2 tablespoons sugar

Noodles

  • 3 tablespoons oil (divided)
  • 1 onion
  • 2 cloves garlic
  • 2 cups kale
  • 454gm package of rice noodles

The Noodles

Let’s start with boiling the noodles. Boil one package (454 grams) of thick rice noodles per the package instructions. Drain and set aside. I like to rinse the noodles once they are cooked, so as to get rid of the starch. This prevents them from sticking together.

The Sauce

Let’s make the sauce for the pad see ew noodles. In a small bowl mix together:

  • 2 tablespoons dark soy sauce
  • 2 tablespoons vegetarian oyster sauce
  • 2 tablespoons light soy sauce
  • 2 tablespoons white vinegar
  • 1 teaspoon garlic chili sauce
  • 2 tablespoons sugar

Mix well and set aside while we get the rest of the ingredients ready.

Cooking the Vegetables

Now that the noodles and sauce are ready, we can move on to the vegetables.

  • In a large pan, add 1 tablespoon of vegetable oil.
  • Heat it on medium and add 1 finely sliced red onion.
  • Add 2 finely chopped garlic cloves.
  • Cook for 3-4 minutes.
  • Add 2 cups of chopped kale to the pan.
  • Cook for 2-3 minutes or until the kale wilts a little.
  • Once done, remove from the pan and set aside.

Getting the Pad See Ew Noodles Ready

Now that the vegetables, sauce, and noodles are all ready and set aside, we can get the recipe together and enjoy it.

  • In the same pan, add 2 tablespoons of vegetable oil. Heat it on medium heat.
  • Add the noodles and sauce into the pan together and stir them so that the noodles are totally coated.
  • Now we need to caramelize the noodles a little. Continue to cook the noodles for 2-3 minutes on medium high heat. The noodles will stick to the bottom, so you will need to scrape the pan. This is a necessary step.
  • Add the cooked kale back into the pan and stir it into the noodles until it is evenly distributed.

Serving Options

Enjoy the noodles hot as soon as they are cooked.

  • Sprinkle some fresh green onion and fresh coriander on top once ready to eat.
  • Need some protein? Add some grilled tofu to the noodles just before serving.
  • My kids love pad see ew noodles with a side of my grilled chicken thighs.
  • They also often ask for a side of my Asian beef and broccoli.

Ingredients

  • Sauce
  • 2 tablespoons dark soy sauce

  • 2 tablespoons vegetarian oyster sauce

  • 2 tablespoons light soy sauce

  • 2 tablespoons white vinegar

  • 1 teaspoon garlic chili sauce

  • 2 tablespoons sugar

  • Noodles
  • 4 tablespoons oil (divided)

  • 1 onion

  • 2 cloves garlic

  • 2 cups kale

  • 454gm package of rice noodles

Directions

  • Boil the noodles, drain, rinse with cold water, and set them aside.
  • While the noodles are cooking, slice the onion, finely chop the garlic, and chop the kale.
  • In a pan add 2 tablespoons of vegetable oil. Once heated add onion and garlic into the pan. Cook for 3-4 minutes.
  • Add kale to the pan and cook for 2-3 minutes or until it is slightly wilted.
  • Remove and set aside.
  • To the same pan, add 2 tablespoons of oil. Add the noodles and sauce at the same time to the pan.
  • Using tongs, mix the noodles into the sauce and continue to cook them for 2-3 minutes. This allows the noodles to caramelize a little and that’s what we are looking for.
  • Add the kale back to the pan and mix it in so it’s evenly distributed.
  • Sprinkle with fresh coriander and green onion and enjoy it hot.

What is the difference between Pad See Ew and Pad Thai Noodles?

Pad see ew noodles are salty, chewy, and a little sour. Pad Thai noodles are more on the sweeter side since they are made with tamarind sauce.

Pad see ew noodles are salty, a little sour, and have more of an umami flavour. They have a little bit of a caramelized and charred flavour that comes from cooking them for a few minutes in the sauce.

Can I make Vegan Pad See Ew noodles?

Yes! My pad sew ew recipe is vegan. The main ingredient in pad see ew that would make the noodles non-vegan is oyster sauce. But, I use vegetarian oyster sauce that is made with shitake mushrooms, so it suitable for vegans.
