Strawberry Swirl Cheesecake Squares

My delectable strawberry swirl cheesecake squares are easy to make and are baked to perfection, ensuring a creamy, dreamy texture.

I love strawberries and I love cheesecake. So, why not put them together and make strawberry swirl cheesecake squares. They are always a hit in our house and our guests alike. They come together so quickly, however, the guests will think you spent hours in the kitchen. Try them once and I can bet you will keep coming back to make them again and again.

Some cream cheese, some graham crackers and some strawberries will give you one of the best desserts you ever make.

Ingredients List for Strawberry Swirl Cheesecake Squares

  • 2 cups fresh strawberries
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 6 tablespoons melted butter
  • 1 and 1/2 cups graham cracker crumbs
  • 3 cups of softened cream cheese
  • 3/4 cups of granulated sugar
  • 1 teaspoon pure vanilla
  • 3 whole eggs

The Strawberries

Let’s get started with the strawberries.

  • Hull and chop 2 cups of fresh strawberries.
  • Place them into a small pot.
  • Add 1/3 cup of sugar and bring it to a boil.
  • Pour them into a blender and blend them until smooth.
  • Once blended, pour the mixture back into the pot.
  • Make a cornstarch slurry by adding 2 tablespoons of cornstarch and 2 tablespoons of water.
  • Add the slurry to the strawberry mixture.
  • Continue cooking for an additional 2-3 minutes.
  • Set it aside and allow it to cool.

The Base for the Cheesecake

Next, we can make the base.

  • Add 6 tablespoons of melted butter to a bowl.
  • To that, add 1 and 1/2 cups of graham cracker crumbs.
  • Mix them.
  • Line a 9×11 inch baking dish with parchment paper.
  • Pour the graham cracker mixture into the baking dish.
  • Spread it evenly and, using a cup or bowl, push it down.
  • Set aside while you make the cream cheese mixture.

The Cream Cheese Mixture

Now we can make the cream cheese mixture.

  • Add 3 cups of softened cream cheese to a large bowl.
  • To that, add 3/4 cup of granulated sugar.
  • Using a hand whisk, mix.
  • Continue to whisk until you have a smooth consistency.
  • Add 1 teaspoon of pure vanilla extract.
  • Then add 3 whole eggs, one at a time.
  • Continue to whisk after the addition of each egg.
  • Once all the eggs have been added, we can pour the mixture over the graham cracker base.
  • Spread it evenly.

The Strawberry Swirl

Now that the cheesecake is ready to go, we can put on the strawberry swirl.

  • Using a spoon, dollop spoonfuls of the strawberry mixture on top of the cream cheese mixture.
  • Using a knife, make a swirl by going back and forth one way, then the other – see video for how to do this.

Baking the Strawberry Swirl Cheesecake Squares

Let’s get baking the cream cheese squares.

  • Preheat the oven to 350°F.
  • Add a baking dish full of water to the bottom rack of the oven.
  • Place the baking dish with the cheesecake on the middle rack.
  • Bake for 30 minutes.
  • Remove from the oven while the cheesecake still has a slight jiggle.
  • Do not overbake.
  • Allow the cheesecake to cool down completely, then place it in the fridge for 3-4 hours.
  • Remove from the fridge and slice it into 24-30 squares.

Serving and Storing Suggestions

Keep the Strawberry Swirl Cheesecake Squares in the fridge in an air-tight container for up to 1 week.

Serve cold with an extra dollop of the strawberry mixture.

What makes cheesecake soft?

My cheesecake is always soft and scrumptious. In order to get the perfect consistency, remove the cheesecake from the oven when it still has a slight jiggle to it. Do not overbake. This ensures a smooth and soft consistency.

How do I prevent my cheesecake from browning?

There’s nothing like a browned or burnt cheesecake. In order to prevent your cheesecake from browning, add a baking dish full of water to the oven while the cheesecake is baking. This helps create moisture in the oven and keeps the cheesecake from drying out and burning.

Can I freeze my strawberry cheesecake?

Yes, you can freeze my strawberry swirl cheesecake. Wrap the baked cheesecake in plastic wrap well. Place it into an air-tight container and freeze it for up to 2 months.
To defrost, remove it from the freezer and let it thaw in the fridge overnight.

  • Using a knife, make a swirl.
  • Add a baking dish of water to the bottom rack of the oven. This prevents the cheesecake from burning.
  • Bake on the middle rack for 30 minutes.
  • Remove it from the oven while it still has a little bit of a jiggle.
  • Allow it to cool down completely, then transfer to the fridge for 3-4 hours.
  • Remove from the baking dish and cut into 24-30 squares.
  • Enjoy with extra strawberry sauce.
