  • 2 and 1/4 cups flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder

The Flour

Let’s start with getting the dry ingredients ready.

  • Firstly, let’s add 2 and a 1/4 cups of flour to a large bowl.
  • To that, add 1/4 cup of granulated sugar.
  • Then, add 1 tablespoon of baking powder.
  • And 1/4 teaspoon of baking soda.
  • Finally, 1/4 teaspoon of salt.
  • Mix everything together and set aside.

The Butter

Let’s add the butter to the flour.

  • Keep your butter in the fridge until you are ready to use it.
  • When ready to use, remove it and quickly grate it.
  • Then, add it to the flour mixture.

Mixing the Butter into the Flour

Let’s get the butter added to the flour.

  • Once you add the butter to the bowl, mix it in quickly.
  • Use your index and middle fingers and thumb to press the butter into the flour.
  • Do not take too long to do this.
  • Because you do not want the butter melting.

Adding the Strawberries

Now that the flour and butter are mixed, we can add the strawberries.

  • Hull and chop the strawberries into small pieces.
  • Add them to the flour mixture.
  • Gently, but quickly, mix them into the flour.

The Liquid

Let’s get the liquid added to the flour.

  • Add 1 cup of buttermilk to a bowl or measuring cup.
  • To this, add 1 tablespoon of pure vanilla extract.
  • Mix them together.
  • Then, add this mixture to the flour.
  • Using your hands, mix the flour just so it’s mixed.
  • Do not overmix. You do not want the butter to melt.

Making the Scones

Now that the dough has come together, let’s make the scones.

  • Place the dough onto a piece of parchment paper.
  • Make a disc from the dough.
  • Gently lift the parchment paper with the dough and place it onto a baking tray.
  • Using a sharp knife, cut the disc into 8 triangles.
  • Place the baking tray into the fridge for about 30 minutes.

Baking the Strawberry Scones

Let’s bake the scones.

  • Preheat the oven to 375 degrees F.
  • Place the cut scones onto the baking tray and place the tray on the middle rack of the oven.
  • Bake them for 18 minutes or until they are browned.
  • Once baked, allow them to rest on the baking tray for about 5 minutes.
  • Then, place them onto a cookie rack to cool down.
  • Enjoy iced or just as they are.

Can you use frozen strawberries for scones?

Yes. You can use frozen strawberries, but you have to make sure to use them when they are still frozen. Once they thaw, they get very wet, and the scone dough will be very wet. Let them thaw just enough so you can cut them into pieces and fold them into the flour while they are still frozen.

How do you make scones flaky?

The best way to make scones flaky is to use really cold butter and chop it or grate it. Then add it to the flour and, using your index and middle finger and thumb, rub the butter into the flour. This helps the butter spread well into the flour and makes them flaky.

  • 1/2 cup cold unsalted butter

  • 1 and 1/2 cups chopped strawberries

  • 3/4 cup buttermilk

  • 1 teaspoon pure vanilla extract

Directions

  • Grate the butter and set it back in the fridge. The butter needs to stay really cold.
  • Hull and finely chop the strawberries.
  • Mix the flour, sugar, salt, baking powder, and baking soda in a large bowl.
  • Add very cold grated butter to it and mix it in using the pinching method.
  • Add the chopped strawberries. Mix quickly to combine.
  • Mix the buttermilk and vanilla in a small bowl or mixing cup.
  • Add the buttermilk to the flour.
  • Mix it in just so it’s mixed. Do not overmix.
  • Once mixed, make a disc.
  • Using a sharp knife or pizza cutter, cut the disc into 8 pieces.
  • Gently lift the scones onto a baking tray and place the baking tray in the fridge for 30 minutes.
  • Brush the half and half onto the scones.
  • Preheat the oven to 375 degrees F.
  • Bake for 15-18 minutes.
